Beef Tallow Stearic Acid. It consists of oleic acid, palmitoleic acid and stearic acid. In industry, tallow is not strictly defined as beef or mutton fat.

Hydrogenated tallow acid, linear monocarboxylic fatty acids (stearic acid, palmitic acid), which are obtained from hardened beef tallow, are used in cosmetic formulations. The fatty acid composition of beef tallow is established by a blend of saturated fatty acids (sfas) including palmitic acid and stearic acid and unsaturated fatty acids (usfas) categorized in accordance with the number of double bonds as monounsaturated fatty acids, especially palmitoleic acid and oleic acid, or polyunsaturated fatty acids. The definition of mutton tallow is the same as that of beef tallow (see chapter 3.2.3).
